RAINING OUTSIDE? MAKE SOME SHORTBREAD

What to do when its raining outside and the children are bored? cook! well bake some cakes more to the point.  We have been making alot of cupcakes recently so today I fancy some thing different but totally scrumptious!

We have decided on Millionaires Shortbread, not the traditional wait for hours whilst the tin cooks in boiling water, but a cheat method by Nigella Lawson.

Ingredients

225g plain flour
75g caster sugar
375g unsalted butter
397g can sweetened condensed milk
4 Tbsp golden syrup
325g plain chocolate

1x 23cm square brownie tin or similar, greased andbottom lined

Directions:

Preheat oven to 170 degs C
Put the flour and sugar in a bowl and run in 175g of butter, clumping the dough together to form a ball. Press this sandy shortbread mixture into the tin and smooth it either with your hands or a spatula. Prick it with a fork and cook for 5 mins. Then lower the oven to 150 degs C and cook for a further 30-40 mins until it is pale olden nd no longer doughy. Let it cool in the tin.

Melt the remaining 200g butter in the microwave in a large microwavable bowl for 2-3 mins then add the condensed milk and golden syrup. Whisk the mixture until the butter is thoroughly incorporated. Heat for 6-7 mins until it is boiling, stirring thoroughly every minute. Watch that it doesn’t burn. It’s ready when its thickened and a light golden brown.** Pour this mixture over the cooled shortbread and eave it to set.

Break the chocolate into pieces and melt. Pour and spread it over the fudgy mixture (the less you touch it the shinier it will be) and leave it to cool. Once set, cut into squares.

This recipe should make approx 24, unless you let a 5 year old cut it up!  We also had some spare white chocolate in the larder so the girls were let loose adding some decoration to the top in white chocolate… this was the end result! totally yum! they didnt last long :(
